Dr Mayer Pinot Noir

Mayer Dr Mayer Pinot Noir is hand harvested from the steep slopes of the winery's Bloody Hill Vineyard in the Yarra Valley, planted at high vine density.
In signature Mayer style, the fruit is wild yeast fermented in open vats, with 100 per cent whole bunch inclusion. Around a year of maturation on lees in French oak follows.
Minimal intervention drives the winemaking, so the wine is handled only once: when it is blended and lightly sulphur adjusted before bottling. There is no fining or filtration.
Bright red, Mayer Dr Mayer Pinot Noir has a balanced stalky texture from the whole bunches, red berry acidity and firm, layered tannins. Cellaring potential is 10 years.
